Are there any real drawbacks of going down this route that I'm not aware of? Trick differential or something in the S3 that the A3 doesn't get? I've been watching a few videos of modded A3s and they absolutely tear it up.
@Arin@APR would know but I think he's at SEMA

Not a bad idea. Assuming you go 2018, you still get the updated DQ381 7-sp transmission. The A3 has a smaller IS20 turbo vs IS38 in the S3, but if you’re going big turbo it doesn’t matter. You do get more standard features with the S3, but most everything you can still get on the A3 if you’re careful. Probably the biggest things that are slightly more difficult to change:

    bigger brakes
    quad exhaust
    S suspension
some interior bits (no S-Sport seats, sport display, etc).
    side sills

But all of the above can be updated/changed. Good thought!

A3 vs S3 - If you're upgrading the turbo, brakes, exhaust, suspension, etc you'll basically be at S3 levels, in terms of performance, without throwing away the more expensive S3 bits. Some things aren't as performance based, like gearing, and the interior / exterior styling, limited catback options, etc, but beyond that, it's not terribly different.
